Food: Recipe for a Low-carb Strawberry Tiramisu

Are you the sweet lover who runs to the refrigerator after every dinner to find a little dessert? Or do you like to eat something sweet with your cup of tea or coffee? You can do so in a healthy way! Because thanks to this personal recipe from Cindy, you will eat a delicious low-carb strawberry tiramisu. Enjoy!

Dessert, the type of food that is not meant to be shared.

The ingredients

Let me start with the most important thing: it’s really not difficult to make this dessert. You need about 15minutes to prepare everything and afterwards count on 2 hours that it needs to cool in the fridge. Are you ready? Then first of all, shop the following ingredients.

Ingredients for 2 people:

– 250g Mascarpone

– 1 box of fresh strawberries (frozen is also possible, but then the preparation takes a little longer)

– 1 lime

– Sugar-free syrup or honey

– 1 can of whipped cream

– 1 box of Boudoir cookies

Let’s make it!

Start by boiling the strawberries in a bain Marie bath. Mix and crush the strawberries until syrupy (looks like jam). Once well melted, combine them with the mascarpone in a large pot. You mix everything until the mascarpone is no longer crumbly.

Once the creamy mash is achieved, you add your lime juice (squeeze 1 lime), 2 tablespoons of your syrup or honey, and add two large tablespoons of whipped cream. Again, mix everything well.

To build your tiramisu, take a Tupperware jar, or small glass bowl. You dip your boudoir cookies in your favorite coffee, and lay them out in a row in the bowl. Afterwards, add a layer of your strawberry mixture, and add fresh strawberries on top of this layer. Afterwards, repeat the steps until your bowl/pot is completely filled. Row of cookies, layer of mascarpone, fresh strawberries, and so on.

Finish with a mint leaf, cocoa powder, or whatever you like and put it in the refrigerator for about 2 hours so everything can set properly. And it’s ready!

Personal tip from Cindy: use coffee with citrus or fruity flavors for this tiramisu. It goes perfectly with the strawberry flavor!
