
Many of us want to live and eat healthier, but sometimes our schedules get in the way and we often reach for unhealthier alternatives. Today our editor Angelo shares his favorite, easy and quick recipes for those who want to snack guilt-free.
A healthy outside starts from the inside.
I love cooking and I love healthy food, unfortunately I don’t always have the best schedule. Because I’m so busy I eat often in between meetings or on the go. Luckily I learnt about a few easy recipes I can make when I do have some more time. I can prepare these in advance and then just enjoy them went I want. Here are my favorite easy and healthy snacks:
Energy balls
Energy balls are probably my favorite snacks to make because they are so easy to make and they taste so good. I make mine with bananas, peanut butter and oatmeal as a base. I just squash a banana in a bowl and add an equal amount of peanut butter and ground oatmeal. Then I go on and add things like dark chocolate, cranberries or nuts. I let the mixture set a while in the fridge. After I go back and roll them into little balls. These energy balls are perfect to have as a snack right before or right after a work out. Or even during the day at work to have something healthy.
Bonus: you can freeze the balls in pairs and take them out 15 minutes before you want to have one. That way they stay fresh longer and you can make a big portion in one go.
Chocolate banana bombs
Okay, I have to admit, I love the combination of chocolate and banana. It just works! So what I do is cut bananas in thicker slices. Then I put some almond cream in between two slices and poor some melted chocolate on top of it. I let it set for 15min in the fridge and then turn it around to cover the other side. So this snack has to stay in the fridge, so you can’t take it to work, but you can freeze it! I just love this snack for late at night when I want to have something guilt free when watching my favorite show on tv.
Very nutty bars
If there’s one snack that is packed with flavor, it’s these nutty bars. All you need is a mix of your favorite nuts, a pinch of salt and some (not too runny) honey. Because I like having a bit of different types of nuts at the same time I go and start chopping all of them so they in smaller pieces. Then I go and pour them in a bowl and add the salt and honey. I mix them until it feels sticky. Then I use a baking tray covered with parchment paper and I spread the mixture even in a rectangular shape. I put it in the fridge for at least 3 minutes and start cutting it in bars.
